Lamb Rogan Josh - A meaty dish from Kashmir

Lamb Rogan Josh or Mutton Rogan Josh Rogan, a delectable traditional Lamb Curry recipe with Persian origins that is also well-liked in Kashmir, is made utilising the slow-cooking technique and a variety of fragrant spices.

This dish has a creamy texture and a flaming crimson colour. While Haleem and Biryani are well-known dishes, Rogan Josh comes close behind.

Ingredients for Rogan Josh

1 kilogramme of cut-up lamb curry

Asafoetida, 1/2 tsp

Cinnamon sticks, two, little

5 pods of black cardamom

hung curd, 150 grammes

Water, 11.2 cups

Milk, 1 ½  tbsp

1.5 cups ghee

1 ¼  seeds of cumin

Peppercorns, 1 tsp.

4 red peppers

1 ¼  tablespoons coriander powder

Saffron steeped in heated milk in two pinches

1 tablespoon Kashmiri red pepper flakes

1 ½  tbsp. Fennel Seeds Powder

1.5 cups all-purpose flour

2 Coriander Leaf Sprigs

Cooking Instructions

Ghee should be placed in a deep-bottomed pan or cooker. When it reaches the proper temperature, add the whole spices and cook them briefly until they begin to smell good. Lowering the flame will prevent the spices from burning.

Make the meat as clean as you can by washing it. Pat it dry. Cumin seeds, asafoetida, and Kashmiri red chilies should be added to the pan’s spice mixture and fried briefly.

Add the mutton pieces after it begins to smell aromatic, and stir well but gently. Put a lid on the cooker and cook the mutton chunks for 5 to 6 minutes over a medium temperature.

Remove the lid as soon as you notice the mutton starting to brown and add 1/2 cup of water. As a result, the meat will become tender and succulent and will better absorb the flavors of the seasonings. For ten to fifteen minutes, reduce the heat and allow the mutton simmer.

Take a bowl and fill it with all-purpose flour. Add the saffron milk after that, along with the powdered spices like fennel, coriander, and Kashmiri red chilli powder.

Additionally, you can add dry ginger powder, while doing so is optional. Stir well after adding the curd mixture to the pan. For one minute, let the mutton stew in this mixture.

After that, add 1 cup of water and simmer the mutton for one to two hours. Stir frequently to prevent the mutton from sticking to the bottom.

Lamb Rogan Josh can be served with both Naan and rice.
